‘All sorts of pasties are made in Westmorland. An apple pasty with some ripe elderberries on top of the layer of apple is very good, and so is the following suet pasty—one would hardly guess suet was used, it has such a nice and original flavour.’—Mrs. E. MAUD GARSTON.

  • Pastry short crust
  • very finely shredded suet
  • brown sugar
  • grated nutmeg.

Method

  1. Roll out the pastry thin.
  2. And use it to cover a dinner plate.
  3. Place on the pastry a layer of very finely shredded suet.
  4. Sprinkle this thickly with brown sugar.
  5. Grate a little nutmeg over the sugar.
