This was a favourite pudding of Mr. Serjeant Woolrych who was born in 1795.

Ingredients

  • Beef suet chopped 1 lb.
  • raisins stoned 1 lb.
  • flour

Method

  1. Mix all well together.
  2. Boil in a cloth which must be closely woven wrung out in hot water, well-floured, and tied very tight close to the pudding.
