The following recipe is another very old English sweet beloved of Cambridge undergraduates in the ‘eighteen-nineties.’

Ingredients

  • To make the pastry: Ground almonds 2 oz.
  • sugar 2 oz.
  • flour

Method

  1. Make the pastry with the ground almonds, sugar, flour, yolks of eggs and pinch of salt.
  2. Butter some dariole moulds; line them with the pastry.
  3. Fill with flour and bake.
  4. Shake out the flour.
  5. Make a good custard delicately flavoured.
  6. Fill the almon
