Ingredients

  • Sweet almonds 2 oz.
  • castor sugar 2 oz.
  • rose water<

Method

  1. Blanch and pound the almonds using some rose water to prevent them oiling.
  2. Add the sugar.
  3. Whisk the whites of the egg very stiffly (quite dry) and blend all together.
  4. Beat well and drop on rice paper as before.
  5. Grate sugar over them and bake in very moderate oven.
