  • Water gallons
  • bruised ginger 3 oz.
  • lemons

Method

  1. Bruise the ginger and boil it for ½ hour in water.
  2. Wash the lemons and slice them and put them in a pan.
  3. Add the cream of tartar and the sugar broken up.
  4. Strain the ginger-flavoured water over the lemons, etc.
  5. When lukewarm work (i.e. ferment) it with the yeast put on a piece of toast.
  6. Let it stand 2 nigh
