For a three-tier cake of the above size the following amounts of ingredients will be required for the almond icing:

Method

  1. Mix as usual to a stiff paste.
  2. Brush the cake all over with apricot jam.
  3. Roll out a length of almond icing the size and height of the sides of the cake; roll out a piece the size of the top and put these on.

  5. Roll smooth with a rolling-pin, and with a sharp knife trim the edges sharp.
