For the white or Royal icing to cover these three almond-covered tiers you will want the following:

Ingredients

  • Finely sifted icing sugar lb.
  • whites of eggs 8
  • orange flower water

Method

  1. Sift the sugar.
  2. Whisk the whites of the eggs which must be new-laid (preserved eggs won’t do as the whites have lost something of their strength).
  3. Add the sugar gradually to the whisked whites, and beat all together vigorously with a wooden spoon
