  • Butter 2 oz.
  • castor sugar 2 oz.
  • eggs

Method

  1. Cream butter and sugar together.
  2. Separate yolks from whites of eggs.
  3. Add the yolks to the butter and sugar and whisk well.
  4. Sieve the flour with the cream of tartar, bicarbonate of soda and salt, and
  5. Add to the egg mixture; add the flavouring and hot water.
  6. Have ready the whites of the eggs stiffly whisked
