‘This is a Devonshire recipe, given to my cousin,’ says Miss Anstey, ‘by a very old friend, about 1870.’

Ingredients

  • Ground rice ½ lb.
  • fine white sugar ½ lb.
  • eggs

Method

  1. Mix the ground rice with the sugar.
  2. Beat the eggs well.
  3. Sift in the rice and sugar; and
  4. Beat all well together for 20 minutes.
  5. Put into a lightly buttered tin, dusted with rice flour and sugar mixed, and bake in slow oven.
