- sugar 4½ lb.

- Stalk, wash and quarter the tomatoes.
- Put them in a bowl.
- Cover with sugar.
- Add juice and rind of the lemons.
- Leave for 24 hours.
- Next day place in preserving pan.
- Add the ginger and chillies tied up in muslin.
- Boil till tender about 1½ hours.
- Take out the ginger.
