  • Green tomatoes 6 lb.
  • sugar lb.
  • lemons

Method

  1. Stalk, wash and quarter the tomatoes.
  2. Put them in a bowl.
  3. Cover with sugar.
  4. Add juice and rind of the lemons.
  5. Leave for 24 hours.
  6. Next day place in preserving pan.
  7. Add the ginger and chillies tied up in muslin.
  8. Boil till tender about 1½ hours.
  9. Take out the ginger.
