- Apples, any kind (windfalls will do, crabs and especially Siberian crabs are, if anything, superior to orchard apples)
- sugar ¾ lb.

- Cut away any unsound bits and if necessary the core, but not if it is quite good.
- Put into a preserving pan, cover with cold water.
- Stew to a pulp.
- Press through a hair sieve.
- Throw away what won’t go through
