Ingredients

  • Apples, any kind (windfalls will do, crabs and especially Siberian crabs are, if anything, superior to orchard apples)
  • sugar ¾ lb.

Method

  1. Wash and dry the fruit quickly.
  2. Do not pare the apples.
  3. Cut them in quarters.
  4. Cut away any unsound bits and if necessary the core, but not if it is quite good.
  5. Put into a preserving pan, cover with cold water.
  6. Stew to a pulp.
  7. Press through a hair sieve.
  8. Throw away what won’t go through
