Ingredients

  • Barberries and preserving sugar, equal weights
  • a kettle (i.e. a pan) of boiling water.

Method

  1. Stand the fruit and preserving sugar in a stoneware jar in a pan of boiling water and keep the latter boiling till the sugar is melted and the barberries are quite soft.
  2. Take out the jar and let the fruit remain in it all night.
  3. Next day turn it into a preserving pan, and boil up for 15 minutes.
