Ingredients: Pick the barberries.; Bruise them slightly and put them in a preserving pan with just enough cold water to cover them.; Put into a jelly bag; (or into a cloth suspended across two kitchen chairs placed back to back) and let the juice drip all night into a pan placed underneath.; Next day measure the juice, and weigh out one pound of preserving sugar to every pint of juice.; Put into preserving pan and, when the sugar is dissolved, boil up quickly for about 5 minutes or until it jellies when tested on a plate.
