Ingredients

  • Moist sugar 7 lb
  • water 1 quart
  • oil of peppermint sufficient to flavour.

Method

  1. Put the sugar and water into a pan and boil to the crack (310°-315° F.).
  2. Remove the boiler from the fire.
  3. Stir in slowly enough oil of peppermint to flavour.
  4. Pour the whole out on to an oiled slab.
  5. Cut off a piece from the mass.
  6. Pull it over a hook fastened in the wall till it becomes a light brown
