- oil of peppermint sufficient to flavour.
- Put the sugar and water into a pan and boil to the crack (310°-315° F.).
- Remove the boiler from the fire.
- Stir in slowly enough oil of peppermint to flavour.
- Pour the whole out on to an oiled slab.
- Cut off a piece from the mass.
- Pull it over a hook fastened in the wall till it becomes a light brown
