Ingredients

  • Burnet heads 4 pints
  • water 1 gallon
  • sugar

Method

  1. Boil the heads in water for 20 minutes.
  2. Strain.
  3. Add sugar and raisins.
  4. When cool, but not cold, add yeast creamed and dissolved in a little of the wine.
  5. Let it stand 2 weeks.
  6. Remove scum as it rises.
  7. Strain into stone jar.
  8. When finished working, close down tightly.
  9. At the end
