- Beat the almonds very fine with a little rose-water to prevent oiling.
- Whisk the whites of the eggs to a strong froth.
- Mix your almonds with the eggs lightly together.
- Add the fine sugar by degrees.
- When your cake is done enough, take it out and lay your almond icing on and then put it in to brown.
