  • Jordan almonds 1 lb
  • rose-water
  • eggs, the whites of 3

Method

  1. Beat the almonds very fine with a little rose-water to prevent oiling.
  2. Whisk the whites of the eggs to a strong froth.
  3. Mix your almonds with the eggs lightly together.
  4. Add the fine sugar by degrees.
  5. When your cake is done enough, take it out and lay your almond icing on and then put it in to brown.
