  • Double-refined sugar 2 lb.
  • fine starch 2 oz.
  • eggs, the white of

Method

  1. Beat the sugar with the starch in a pestle and mortar.
  2. Sift it through a gauze sieve.
  3. Beat the whites of the 5 eggs with a knife upon a pewter dish for half an hour.
  4. Beat in your sugar a little at a time, or it will make the eggs fall and will not be so good a colour.
  5. When you have put in all your sugar, beat it half
