At the Whitsuntide Feast at Melton, it is said enough cheesecakes are made and eaten to pave the whole town. Mrs. Brewitt has kindly given her recipe. She is very generous, and all she gives is good.

Ingredients

  • Well-drained dry curd 1 lb
  • eggs 8 (but only use 5 of th

Method

  1. Press the curd and butter through a sieve.
  2. Add the flavouring, eggs, a few currants and a little cream.
  3. Have ready some patty-pans greased and floured as usual and put a little of the curd mixture in each. Bake in a quick oven.
