  • Whites of egg 6
  • lump sugar 16 lb.
  • water 6

Method

  1. Whisk the whites of eggs.
  2. Put them and the loaf sugar to the water.
  3. Boil up, skimming it well.
  4. Stone and chop the raisins.
  5. Put them to the boiling liquid.
  6. Add the elder flowers, well rinsed.
  7. Infuse these last, do not boil them.
  8. When new-milk-warm, put the yeast to the liquid, stirring
