Ingredients

  • Elderberries 1 quart
  • water 2 quarts
  • sugar, Lisbon coarse, but not the very coar

Method

  1. Break the fruit in the water.
  2. Run the liquor and rub the fruit through a hair sieve.
  3. To every quart of juice put ¾ lb. sugar.
  4. Boil the whole ¼ of an hour with the Jamaica pepper, ginger and cloves.
  5. Pour it into a tub
