These two recipes are sent by Mrs. Oswell, Warren, Holmbury St. Mary, Dorking, who says it is a very nice nursery cake which can be made from the flead left over from the rendering of the lard.

Ingredients

  • Flour 1 lb.
  • sugar, brown ½ lb.

Method

  1. Mix the flead left from the rendering of the lard (called in Shropshire ‘scratchings’), and all the dry ingredients with the flour.
  2. Melt the soda in a little milk, and add to milk. Mix well and bake as above.
