These two recipes are sent by Mrs. Oswell, Warren, Holmbury St. Mary, Dorking, who says it is a very nice nursery cake which can be made from the flead left over from the rendering of the lard.

Flour 1 lb.
sugar, brown ½ lb.

Method

Mix the flead left from the rendering of the lard (called in Shropshire ‘scratchings’), and all the dry ingredients with the flour.
Melt the soda in a little milk, and add to milk. Mix well and bake as above.
