Miss Acton says: ‘This pudding is constantly served to travellers at the hotel at the foot of the mountain from which it derives its name,’ and states that the following is the ‘genuine receipt.’

Ingredients

  • Some fine raisins split open, stoned but not divided
  • butter
  • beef-kidney suet ½ lb.
  • bread-crumbs

Method

  1. Butter a mould or basin rather thickly, and ornament it with the prepared raisins, pressing the cut sides well into the butter.
  2. Mix all the dry ingredients well together.
  3. And blend well with the well-whisked eggs till thoroughly mixed.
  4. Then pour carefully into the decorated basin and boil as directed.
  5. Serve with
