Couscous makes the perfect partner for this spice-blackened chicken. If you pop the chicken in the fridge to marinate before you go to work, it will be ready to cook as soon as you get home, and even more full of flavour from a longer time marinating. Toasting the couscous in advance also adds to the nutty flavour.
Mix together all the marinade ingredients in a non-metallic bowl. Season the chicken, then add it to the marinade and turn so it is fully coated. Cover and leave to marinate in the fridge for at least 20 minutes.
