I love the change of texture and added interest that you get by adding chicken to macaroni cheese, so that’s what I’ve done with this recipe. Plus I’ve spiced it up with a little mustard and included some crispy pancetta for a more rounded flavour. This is the kind of classic recipe that doesn’t need to be radically modernized because it is so good, just tweaked a little.
