I was first introduced to real Mexican food when I had to cater for a Mexican event with Patron tequila in London. I worked with a Mexican chef to create an authentic menu with my own style. Tostadas are fried corn tortillas, usually made with a few day-old corn tortillas, which make a tasty crisp base to top with delicious ingredients.

To cook the chicken, put the stock in a saucepan with a pinch of salt. Bring it to a gentle simmer, then add the chicken and poach for about 8 minutes.
