Tarte tatin is a classic French recipe for an apple tart cooked upside-down, supposedly invented when a pie was dropped on the floor. This is my modern twist as it is a savoury version that combines mellow goats’ cheese and sweet red onions.
Roll out the pastry on a lightly floured work surface until it is about 5cm/2in larger than a 23cm/9in ovenproof frying pan. Cover with a clean, damp tea towel and leave to one side.
