Short Rib Adobo

Los Angeles is home to the largest population of Filipinos in the United States, and Filipino cuisine is a huge part of California’s foodways. I’m grateful for it. Some of my best friends—and best meals—come from the Filipino community, and I’ve been lucky enough to learn from them. One of the things the community put me onto is adobo, which is basically immersing cooked food in a mixture of vinegar and various spices, aromatics, and salt. At home, I like to do a short rib adobo, which I se
