Bring the fat, water and seasonings to the boil. Sprinkle in the maize flour, stirring briskly to prevent lumps from forming. Reduce the heat and continue stirring while it cooks for 10–15 minutes until the mixture leaves the sides of the pan. It should be quite firm at this stage.
