This recipe was collected many years ago from the small restaurant run by the late Mme Délibié-Veyret in the tiny village of Marquay in the Dordogne. So parochial are the food repertoires of different areas that when we offered this soup to dear friends and neighbours of ours it was described as ‘pas ma! du tout, cette soupe anglaise’. And the author of this comment had three helpings.
