  • 4 large (and 4 small) chicory
  • 30 g (1 oz) butter


Allow at least one large chicory for each person and perhaps a small one as well if it is to be the only vegetable of the meal.

Trim the bottom neatly with a stainless steel knife and wipe each one clean with a damp cloth. Plunge them into a pan of boiling, salted water containing a slice of lemon, reduce the heat and allow to simmer gently for 8 10 minutes. Be careful not to overcook t
