There are no prizes for guessing where the next salad comes from.
Poach the truffle in a little white wine for 5 minutes. Then slice thinly and mix it with the washed and dried salad. Leave it a little while to impregnate the leaves. Mix the vinegar with the seasonings, blend in the oils and herbs and when you are ready to serve, toss the salad in this dressing.
