  • 100 g caster sugar
  • 1 vanilla pod


  1. Put the sugar and 200ml water in a small saucepan over a low heat. When the sugar has dissolved, increase the heat and bring to the boil. Split the vanilla pod lengthways, scrape out the seeds and add them to the sugar syrup. (Save the pod to make vanilla sugar.)
