THIS SALAD IS ONE OF MY FAVOURITE STARTERS. I LOVE ITS SIMPLICITY AND FRESHNESS, AND THE BALSAMIC CARAMELISED ONIONS ADD A MOUTH-WATERING TANG. CHOOSE BRIGHT RED TOMATOES WITH A DISTINCT FRAGRANCE.

Ingredients

  • a little vegetable oil
  • 250 g onions, peeled and finely sliced

Method

  1. For the vinaigrette, in a small bowl, whisk together the olive oil and wine vinegar until emulsified; set aside.
  2. Place a saucepan over a low heat and add a little vegetable oil. When hot, add the sliced onions and cook gently until they are soft and caramelised, about 10-15 minutes. Add the balsamic vinegar and let bubble to reduce down until sticky, about 8 mi
