I MAKE THIS THAI SALAD AT HOME A LOT - IT’S THE PERFECT DISH TO TOSS TOGETHER AND ENJOY WITH A CHILLED BEER. YOU CAN ADD SOME SHREDDED CHICKEN FOR A MORE SUBSTANTIAL SALAD IF YOU LIKE. GREEN PAPAYAS ARE AVAILABLE FROM CHINATOWN AND ASIAN FOOD STORES.

  • 4 garlic cloves, peeled and finely diced

Method

  1. Peel, halve and deseed the papaya, then shred the flesh finely.
  2. Using a pestle and mortar, pound the garlic and chillies together to a paste. Add the dried shrimp and pound roughly. Add a handful of the papaya, crushing it roughly. Tip in the fish sauce, lime juice and sugar and pound together until the sugar is dissolved.
