MAKE THIS SUNDAE DURING THE SUMMER USING HOME-GROWN STRAWBERRIES. AT OTHER TIMES, SUBSTITUTE SEASONAL FRUIT: GREENGAGES OR PLUMS IN THE AUTUMN; POACHED PEARS OR APPLES IN WINTER; POACHED RHUBARB IN THE SPRING.

  • 4 large (or 7 small sheets) of leaf gelatine

  1. Quarter the strawberries and set aside. For the jelly, soak the gelatine leaves in cold water to cover until softened.
  2. Meanwhile, put 200ml water and the sugar into a saucepan and slowly bring to the boil, stirring occasionally to encourage the sugar to dissolve. Reduce the heat to low, add the strawberries and heat gently to soften. Once they are tender and th
