THIS IS A SIMPLE, NO-FUSS, YET GORGEOUS DESSERT. MARINATING THE PEACHES WITH HONEY AND LEMON THYME ADDS A SCENTED, SOPHISTICATED TOUCH.

Ingredients

  • 6 tbsp thin honey
  • 6 lemon thyme sprigs, leaves picked
  • 3 or 4

Method

  1. In a small bowl, whisk together the honey, lemon thyme leaves and 2 tbsp warm water.
  2. Halve and stone the peaches. Cut one into wafer-thin slices, using a mandolin if possible. Cut the rest of the peaches into 1cm dice. Lay the peach slices in one side of a dish and spoon the diced peach into the other side. Pour the honey mixture over them, cover and chill for
