I’VE DECONSTRUCTED THIS CLASSIC DESSERT, AS I DO WITH A LOT OF MY DISHES AT THE RESTAURANT. RASPBERRIES, VANILLA AND PEACHES ARE A MARRIAGE MADE IN HEAVEN.

Ingredients

  • 170 g raspberries
  • 200 ml white wine
  • 1 tbsp

Method

  1. Halve the raspberries, place them in a bowl and set aside.
  2. Pour the white wine into a saucepan and add 200ml water, the sugar, honey and vanilla extract. Bring to the boil, stirring occasionally. Add the peaches and bring back to a simmer. Lower the heat and poach gently for about 5 minutes until the peaches are just tender. Lift them out with a slotted spoon o
