THE SUCCESS OF THIS DISH RELIES ON THE FRESHNESS AND RIPENESS OF THE FRUITS. FOR ME, THIS IS ONE OF THE BEST DESSERTS IN THE BOOK - SIMPLE PERHAPS, BUT THE FLAVOUR PROFILE IS IMMENSE.

Ingredients

  • 200 g strawberries, hulled
  • 1 tbsp icing sugar
  • 3

Method

  1. Cut the strawberries into quarters or eighths, depending on size, and place in a bowl. Add the icing sugar and thyme leaves and mix gently. Cover and chill.
  2. Halve the melon, scoop out the seeds and cut the flesh away from the skin. Purée the melon flesh in a blender until smooth. Add the icing sugar (adjust according to the sweetness of the melon). Pass through
