I HAVE BASED THIS ON MY MUM’S RICE PUDDING, WHICH HAD A WONDERFUL WARMING QUALITY. IT WAS ONE OF THE FEW DISHES I LOVED EATING AS A CHILD. AT AN EARLY AGE, FOOD WAS A CHORE RATHER THAN A PASSION FOR ME... HOW THINGS HAVE CHANGED.

Ingredients

Rice Pudding:

  • 100 g unsalted butter
  • 180 g pudding rice
  • 120

Method

  1. For the rice pudding, preheat the oven to 140°C/Gas 1. Melt the butter in a large heavy-based ovenproof cooking pot over a low heat. Add the rice, sugar, milk and cream. Slowly bring to the boil, then take off the heat and stir to distribute the rice evenly over
