SUMMER PUDDING - SOFT FRUITS ENCASED IN BREAD STAINED RED OR PURPLE WITH THE BERRY JUICES - IS A CLASSIC BRITISH DESSERT, BUT AUTUMN FRUITS CAN BE USED IN THE SAME WAY. I USE BRIOCHE RATHER THAN PLAIN BREAD AND SERVE THE PUDDING WITH CLOTTED CREAM FOR A TOUCH OF LUXURY.

  • 1 Gala apple
  • 1 Granny Smith apple
  • 1 pear

Method

  1. Quarter, core and dice the apples and pear; halve, stone and dice the plums. Place the fruit in a large saucepan with the lemon juice. Scrape the seeds from the vanilla pod(s) and add to the pan together with the empty pod pieces. Bring to a simmer over a medium heat, stirring occasionally, then lower the heat and simmer for about 10 minutes until softened. Stir in the h
