Ingredients: ½ tsp pink peppercorns; 80 g caster sugar; 2 passion fruit; 20 g granulated or caster sugar; juice of 2 limes (save the zest); 80 g egg yolks (4 medium); 80 g butter, diced; juice of 2 lemons (save the zest); 1 tsp pink peppercorns, cracked; Candied lime and lemon zest (use the zest from the above fruit); 100 g icing sugar, sifted; 100 g caster sugar; 100 g egg whites (2-3 eggs, depending on size); 80 g eggs (about 2 large), beaten; 1 tbsp Vanilla syrup

THIS COMBINATION OF FLAVOURS IS A LITTLE UNUSUAL, BUT THE HEAT OF THE PEPPERS REALLY WORKS WITH SWEET MERINGUES. SAVE ANY LEFTOVER CITRUS CURD TO SPREAD ON CRUMPETS.

Pink Peppercorn Syrup:

1 tsp pink peppercorns, cracked
1 tbsp Vanilla syrup

Method

Preheat the oven to 90°C/Gas ¼ and line a baking sheet with baking parchment.
For the peppercorn syrup, mix the cracked pink peppercorns with the vanilla syrup in a small bowl; set aside.
To make the meringues, using an electric mixer, whisk t
