Ingredients: 1 tsp vanilla extract; 50 g caster sugar; tiny mint leaves; 1 tbsp icing sugar, to dust; 50 g cashew nuts, toasted and finely ground; 2 tsp cornflour; a little unsalted butter, to grease the tray; 5 large egg whites; ¼ tsp cream of tartar; 4 large egg yolks, beaten; 100 g caster or granulated sugar; 1 tbsp unsalted butter; 2 tsp vanilla extract; 1 tbsp icing sugar; 2 passion fruit; 500 ml milk

Method

For the passion fruit sauce, halve the passion fruit and scoop out the pulp and seeds into a bowl. Add the icing sugar and stir until dissolved. Cover and chill.
