WHEN SPENDING TIME IN NEW YORK, YOU HAVE TO TRY THE AMAZING CHEESECAKES ON OFFER; MOST CHEFS DO THEIR OWN VERSION. HERE’S MY HOMAGE TO THE NY CHEESECAKE.

Ingredients

Base:

  • 35 g butter, plus extra to grease the tin
  • 130 g digestive biscuits, crushed

  1. Preheat the oven to 180°C/Gas 4. Lightly butter a 20cm springform cake tin and line the bottom with buttered greaseproof paper. Scrunch a sheet of foil under the base and around the outside of the tin (to prevent any water seeping in during baking).
