Ingredients: 15 g caster sugar; 700 g soured cream; 50 g good-quality dark chocolate; 35 g butter, plus extra to grease the tin; 180 g good-quality dark chocolate; 130 g digestive biscuits, crushed; 470 g cream cheese; 190 g caster sugar; 6 large egg yolks, beaten; 2 tsp vanilla extract; 3 pinches of salt

Method

Preheat the oven to 180°C/Gas 4. Lightly butter a 20cm springform cake tin and line the bottom with buttered greaseproof paper. Scrunch a sheet of foil under the base and around the outside of the tin (to prevent any water seeping in during baking).
