  • 3 lbs. crawfish tails
  • 2 cups seasoned bread crumbs
  • 2 large

Method

Clean about 150 heads and boil in a large pot with two tablespoons baking soda.

Grind crawfish tails, onions, celery, and bell pepper. In a large bowl mix with remaining ingredients and push stuffing into heads. Roll the stuffed part in flour and fry just enough to set stuffing.
