Ingredients: 6 to 10 lbs. of thick catfish fillet; Cooking bag, turkey-size; Cooking bag, turkey-size; 1 TBS. flour; 1 lb. oleo; 1 tsp. onion powder; 1 TBS. Lea & Perrins Worcestershire sauce; 2 tsp. Louisiana hot sauce; Juice of two lemons; Juice of two limes; 1 cup dry white wine; 2 tsp. salt; Cayenne pepper

Method

Sprinkle fish with cayenne pepper and salt. Put flour in cooking bag and shake. Put fish in bag and pour lemon butter sauce around it. Seal bag and punch 12 holes in top of bag with a carving fork. Bake 30 minutes at 350 degrees.
