Clean ducks well, leaving the skin on them. Prepare smoker cooker with the following seasonings in the water pan:

Ingredients

  • 1 cup dry white wine
  • 1 onion, whole
  • 1 apple, halved

Method

Put an apple or turnip or onion or all of these inside the ducks. Salt and pepper well inside and out. Put in Cookin’ Cajun, being very careful not to overcook.
