When I get my alligator tail, I put it in a cooler with ice and let it soak to leach out the blood. I pour off the ice water and put more ice on it. After about 2 days, the meat is nice and white.

Then get the smoker cooker ready following my general directions with these seasonings in the water pan.

Method

Sprinkle and pat the outside of the meat with salt and cayenne pepper. Cook 8 to 10 hours, depending on the size of the tail.
