Method

To make the nougatine wafers, preheat the oven to 180°C/350°F/Gas Mark 4.

Melt the sugar in a saucepan until golden brown. Add the flaked almonds and spread on an oiled tray to cool. Grind when cool and mix with the liquid glucose to form a paste.
