• 4 egg yolks
• 150 g (5 oz) caster sugar

Whisk the egg yolks and sugar together until pale and frothy. Beat the cocoa powder and butter together. Melt the chocolate and add it to the egg mixture.

With a balloon whisk, whip the cream and icing sugar together, then stir in the egg mixture and the cocoa butter until evenly combined.
