  • 8 medium tomatoes
  • 50 ml (2 fl oz) sherry vinegar

Method

Roughly cut up six of the tomatoes and place them in a food processor or blender along with the sherry vinegar, walnut oil, a good pinch of salt and a few turns of the pepper mill.
